I’m not one of those people who love to cook and who can just walk into the kitchen, stare at the ingredients available, and whip something up on the spot. However, when I moved out on my own I quickly learned how expensive eating out all the time can get, so I figured I’d give cooking a try. It turns out, it’s not so bad when you make it fun and get creative – and there’s tons of ways to get creative in the kitchen! Exhibit A: These Mickey Mouse shaped nachos! 🙂
So one thing everyone knows about me is what a huge Disney fan I am. I love the movies, I love the theme parks, I know the songs back and forth. I’m pretty much Disney obsessed, so you can imagine my excitement as I was shopping at Target and came across these Mickey Shaped Veggie Chips, they had “Mickey shaped nachos!!” written all over them.
So that’s what I did! I bought the rest of the ingredients, went home, laid the chips out on the oven tray, added beans and shredded cheese (extra cheese!), put it in the oven for 5 minutes, then added tomatoes, sour cream and avocado, and DONE! Mickey shaped nachos ready to eat! YUMMMM!!!
I have to say, I was especially excited about this meal because it was actually healthy! I used veggie chips, lite sour cream, black beans, and of course, extra avocados – which are both healthy and delicious.

Mickey Shaped Nachos
- Mickey Shaped Veggie Chips
- Black Beans
- Mozzarella Cheese
- Lite Sour Cream
- Diced Tomatoes
- Diced Avocado
Place the chips on an oven tray. Add black beans and shredded mozzarella cheese. Bake for 5 minutes at 300º then top with sour cream, diced tomatoes and avocado.
